Title: Adaline’s ‘Nerdy Unicorn’ Cookies (age 5)
Ingredients:
Are you ready for a moist red velvet cookie with a twist? Covered in a sweet cotton candy icing with a white chocolate unicorn horn and sprinkles for extra pop. This cookie will not disappoint if you have a sweet tooth. Cookie 3 c. flour 1 c. sugar 1 c. brown sugar packed 1 c. butter, room temperature 1 tsp. red velvet flavoring 1 tsp. baking soda 2 eggs ½ tsp. salt 1 large box of Nerds candy Icing ½ c. butter, room temperature ¼ c. milk 3 c. powdered sugar food coloring (pink and purple) 1 tsp. cotton candy flavoring Unicorn Horn 2 different color chocolate melts
Directions:
Make the Cookie: Preheat oven to 350°F. Mix dry cookie ingredients: flour, baking soda, salt, sugars In two separate bowls, separate egg yolks and egg whites In egg yolk bowl, add red velvet flavoring and butter. Mix egg yolk bowl with dry ingredients. Add box of Nerds. Use a mixer or mix with spatula until fully mixed. Using an electric whisk, whisk egg whites until white and fluffy; this will create the soft full-rise cookie. Fold egg whites into cookie batter bowl using a spatula. Cover in clear wrap; put in freezer 15–30 min. Once cookie is cold and easy to form, make your desired cookie size Put into oven; bake 12–14 min. Cool on wire rack for 20 min. before adding icing Make the icing: Combined all icing ingredients; mix well until no clumps Divide icing in half; in one half, add pink food coloring, the second half, add purple. Put in refrigerator 30 min. or more to thicken Drizzle or pipe icing onto cookies. I like to mix my two colors to create a fun swirl of colors. Top your cookie with unicorn sprinkles and a unicorn horn. Make the Unicorn horn (optional) Lay out parchment paper Draw or print out your unicorn horn; put this under the parchment paper Pick 2 of your favorite chocolate melt colors (I picked Pink and Purple) Melt chocolates – easy tip for first-time bakers: put a handful of melts in a zip-lock baggie and put baggie into boiling water for 2 min. With the help of a parent, pull out the bags and squeeze chocolate all to one corner, then cut a small hole at the tip. Alternate the colors tracing your unicorn horn Let cool then carefully, peel the horn off, and place on your cookie
